10-minute cheesy salmon rice bake

Ingredients

  • 490g jar pasta bake three-cheese sauce
  • 415g can red salmon, drained, flaked, large bones discarded
  • 250g (11 ⁄2 cups) frozen peas, corn & capsicum
  • 60ml (1 ⁄4 cup) thickened cream
  • 1 green shallot, thinly sliced
  • 450g packet microwave long grain white rice
  • 120g (11/2 cups) coarsely grated cheddar
  • Select all ingredients

Method Steps

  • Step 1Place the pasta sauce, salmon, frozen vegies, cream and shallot in a saucepan over medium-high heat. Cook, stirring, for 3-4 minutes or until the mixture comes to the boil.
  • Step 2Meanwhile, heat the rice in the microwave following packet directions. Spread the rice over the base of a 2L (8 cup) greased baking dish.
  • Step 3Preheat the oven grill to high. Spread the salmon mixture over the rice. Sprinkle with the cheese. Grill for 3 minutes or until the cheese is golden and melted.
