INGREDIENTS
FOR SALAD:
- 2 chicken breasts
- 2 tbsp coconut oil
- 1 bunch romaine lettuce 1lb, chopped
- 4 radishes sliced
- 1 cup cooked garbanzos chickpeas rinsed + drained
- 1 cucumber peeled + sliced
- 1 avocado peeled + sliced
- ½ tsp white sesame seeds
- ½ tsp black sesame seeds
FOR HONEY MUSTARD DRESSING:
- ¼ cup honey
- ¼ cup yellow mustard
- 2 tbsp extra virgin olive oil
- 1 tbsp mayonnaise
- ½ tsp salt
- ½ tsp smoked paprika
- 1 tsp white vinegar
- Juice of 1 lime
INSTRUCTIONS
- Wash chicken breasts
- In a non-stick pan melt the coconut oil on medium heat
- Add chicken breasts and cook for 8 minutes on each side
- Remove from pan and set aside
- In a large salad bowl add chopped lettuce, sliced radish, cucumber, avocado and chickpeas
- Slice the chicken breast into thin slices and add it in the salad
- In a large jar, add the honey, mustard, olive oil, mayonnaise, salt, smoked paprika, white vinegar and juice of lime. Shake well until dressing in well combined
- Drizzle over salad and chicken
- Sprinkle with black and white sesame seeds. Enjoy!
