Ingredients
- 6 Old El Paso Regular Flour Tortillas, cut into pieces
- 30g pkt Old El Paso Taco Spice Mix Extra Mild Super Tasty
- 1 cup (120g) grated tasty cheddar
- 425g can black beans, rinsed, drained
- 1/3 cup (80g) drained pickled jalapeño slices
- 1 avocado, stoned, peeled, thinly sliced
- 2 tomatoes, chopped
- 2 spring onions, thinly sliced
- Coriander sprigs to serve
- Select all ingredients
Method Steps
- Step 1Preheat oven to 200°C. Place tortilla pieces and spice mix in a large bowl. Spray with olive oil spray and toss to combine. Arrange the tortilla pieces in a large baking dish and bake for 5 mins. Turn and bake for 5 mins or until light golden.
- Step 2Sprinkle cheddar over the tortilla pieces. Bake for a further 8 mins or until cheddar melts and is golden.
- Step 3Top with black beans, jalapeño slices, avocado, tomatoes, spring onions, and coriander sprigs to serve.
