One-pot nacho bake

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 (400g) orange sweet potato, peeled, diced
  • 1 red capsicum, sliced
  • 2 zucchini, halved, cut into 1cm-thick slices
  • 420g can Heinz Chilli Beanz Hot
  • 2 x 125g cans corn kernels, drained
  • 1/2 x 230g packet yellow corn tortilla strips, roughly broken
  • 3/4 cup grated tasty cheese
  • Fresh coriander sprigs, to serve
  • Select all ingredients

Method Steps

  • Step 1Heat oil in a large, ovenproof frying pan over high heat. Add sweet potato. Cook, stirring, for 3 minutes or until potato is lightly charred. Add capsicum. Cook, stirring, for 3 minutes. Add zucchini. Cook, stirring, for 1 minute.
  • Step 2Reduce heat to medium. Add beans, corn and 1/4 cup water. Season with salt and pepper. Stir to combine. Cover. Cook for 10 minutes or until vegetables are just tender.
  • Step 3Meanwhile, preheat grill on medium-high.
  • Step 4Sprinkle bean mixture with tortillas, then cheese. Grill for 3 minutes or until melted and golden. Serve sprinkled with coriander.
