Ingredients:
- 9 slices white bread buttered
- 2 tbs chocolate chips
- 375 ml lite and creamy evaporated milk
- 2 tbs caster sugar
- 3 eggs
- 2 tbs almond flakes
- 2 tbs apricot jam
Instructions:
- Preheat oven to 180 degrees.
- Grease a rectangle ovenproof dish.
- Take 4 slices of bread and cut them into 3 strips, and trim off crusts.
- Layer strips and chocolate chips in the base of the dish.
- Top with another layer of strips.
- Spread apricot jam across the top of the strips.
- Whisk together milk, caster sugar and eggs.
- Pour over bread, and let stand for 10 minutes.
- Sprinkle with flaked almonds.
- Bake for 50 minutes, or until set.
NOTES
Bread can be strips, or squares, or even circles on top. Depends on what shape your dish is. In the picture the bread is flat on the bottom and on the top. I have tucked the bread under each other; it is only two layers. Can use sultanas instead of chocolate chips.
