Apple Sponge Pudding

Ingredients:

  • 4 tbs caster sugar
  • 2 tbs boiling water
  • 1 egg
  • 6 tbs self-raising flour
  • 1 pinch salt
  • 2 cup custard *to serve

STEWED APPLES

  • 4 granny smith apple
  • 1 tsp ground cinnamon
  • 1 tbs caster sugar

Instructions:

  1. Preheat oven to 190C degrees.
  2. Slice the apples into quarters and place them into a medium saucepan and fill with water until they are almost covered. Add a teaspoon of cinnamon and heaped tablespoon of caster sugar to the water. Cook over a medium heat until the apples have softened. Drain and set aside until needed.
  3. Place the softened butter, caster sugar and the boiling water into the bowl of an electric mixer and beat until well combined.
  4. Add the egg and mix well to combine before adding the self raising flour and a pinch of salt.
  5. Divide the stewed apples between the ramekins and spoon the cake mixture over the top.
  6. Place the puddings into the preheated oven and bake for 15-18 minutes, or until the cake has cooked through.
  7. Carefully remove the puddings from the oven and serve with a custard.

NOTES

I like to make mine in four individual serves, however you can make one big pudding if you prefer.
