INGREDIENTS
- 1 large pizza crust*
- 2 cups cooked chicken shredded*
- 1/2 cup barbecue sauce
- 1/4 cup sliced red onion
- 2 cups shredded smoked gouda mozzarella cheese, or a combo of both
- 1/2 cup cilantro chopped
INSTRUCTIONS
- Prep the pizza stone/pan: Preheat the oven to 425 degrees. Once heated, place the pizza stone or pan in the oven.
- Prep the crust: Place the pizza crust on a large piece of parchment paper. If the crust is still in dough form, roll out the dough.
- Add the toppings: Spread a thin layer of barbecue sauce on the pizza crust. In a bowl, combine the remaining barbecue sauce and chicken. Then, add on the toppings in this order: 1 1/2 cups of cheese, red onion, BBQ chicken, remaining 1/2 cup cheese.
- Bake: Remove the pizza pan or stone from the oven. Slide the pizza onto the pan and bake for 10-15 minutes until the cheese is melted and bubbly and the crust is crispy on the outside and cooked through (if using pizza dough). Finish with a sprinkle of fresh cilantro.
NOTES
* Basically, any type of crust will work, including pre-baked pizza crust, pre-made refrigerated pizza dough, homemade pizza dough, or pre-made cauliflower pizza crust.
** Some easy options include a store-bought rotisserie chicken, chicken breasts or thighs cooked in the Instant Pot or slow cooker, or any leftover chicken you have on hand.
