Creamy Chicken Meatballs

INGREDIENTS

FOR MEATBALLS:

  • 1 pound ground chicken
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground oregano
  • 1 egg
  • ½ cup panko
  • 1 cup shredded swiss cheese

FOR MEATBALL SAUCE:

  • 1 onion
  • 1 cup mushrooms chopped
  • 2 garlic cloves minced
  • 1 tbsp fresh basil chopped
  • 1 tbsp fresh thyme
  • 3 tablespoons unsalted butter
  • 3 tbsp soy sauce
  • 2 cups heavy cream

INSTRUCTIONS

FOR MEATBALLS:

  • Preheat oven at 180C/ 350F
  • Line a baking sheet with baking paper
  • In a bowl add ground chicken, salt, garlic powder, onion powder, oregano, egg, panko and cheese
  • Mix well with hands until all ingredients are well combined
  • Use an ice-cream scoop to portion and shape chicken mixture for meatballs. Shape further with your hands into little balls and place each meatball on baking sheet
  • Bake for 40 minutes at 180C/350F until golden brown

FOR MEATBALL SAUCE:

  • Slice onion
  • In a non-stick pan melt the butter on medium heat
  • Add the onion, mushrooms, garlic, basil and thyme and saute for 10 minutes
  • Add soy sauce and let sauce simmer for another 5 minutes
  • Add cooked meatballs in pan
  • Add heavy cream and simmer for another 5 minutes
  • Remove from heat and enjoy!
