INGREDIENTS
FOR MEATBALLS:
- 1 pound ground chicken
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground oregano
- 1 egg
- ½ cup panko
- 1 cup shredded swiss cheese
FOR MEATBALL SAUCE:
- 1 onion
- 1 cup mushrooms chopped
- 2 garlic cloves minced
- 1 tbsp fresh basil chopped
- 1 tbsp fresh thyme
- 3 tablespoons unsalted butter
- 3 tbsp soy sauce
- 2 cups heavy cream
INSTRUCTIONS
FOR MEATBALLS:
- Preheat oven at 180C/ 350F
- Line a baking sheet with baking paper
- In a bowl add ground chicken, salt, garlic powder, onion powder, oregano, egg, panko and cheese
- Mix well with hands until all ingredients are well combined
- Use an ice-cream scoop to portion and shape chicken mixture for meatballs. Shape further with your hands into little balls and place each meatball on baking sheet
- Bake for 40 minutes at 180C/350F until golden brown
FOR MEATBALL SAUCE:
- Slice onion
- In a non-stick pan melt the butter on medium heat
- Add the onion, mushrooms, garlic, basil and thyme and saute for 10 minutes
- Add soy sauce and let sauce simmer for another 5 minutes
- Add cooked meatballs in pan
- Add heavy cream and simmer for another 5 minutes
- Remove from heat and enjoy!
