Ingredients:
- 2 tbs butter softened
- 4 tbs caster sugar
- 2 tbs boiling water
- 1 egg
- 6 tbs self-raising flour
- 1 pinch salt
- 2 cup custard *to serve
STEWED APPLES
- 4 granny smith apple
- 1 tsp ground cinnamon
- 1 tbs caster sugar
Instructions:
- Preheat oven to 190C degrees.
- Slice the apples into quarters and place them into a medium saucepan and fill with water until they are almost covered. Add a teaspoon of cinnamon and heaped tablespoon of caster sugar to the water. Cook over a medium heat until the apples have softened. Drain and set aside until needed.
- Place the softened butter, caster sugar and the boiling water into the bowl of an electric mixer and beat until well combined.
- Add the egg and mix well to combine before adding the self raising flour and a pinch of salt.
- Divide the stewed apples between the ramekins and spoon the cake mixture over the top.
- Place the puddings into the preheated oven and bake for 15-18 minutes, or until the cake has cooked through.
- Carefully remove the puddings from the oven and serve with a custard.
NOTES
I like to make mine in four individual serves, however you can make one big pudding if you prefer.
