- 2 medium Avocados (cubed)
- 1 medium Persian cucumber (diced; ~1.5 cups)
- 10 oz Grape tomatoes (halved; ~2 cups)
- 1 medium Jalapeno (seeded and diced)
- 1/2 cup Whole kernel corn
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1/4 tsp Sea salt (to taste)
- 1/4 tsp Black pepper (to taste)
- 1 tbsp Fresh cilantro (chopped)
INSTRUCTIONS

- In a medium bowl, add the avocado, cucumber, grape tomatoes, jalapeno, and corn. Mix until well combined.
- In a small bowl, add the olive oil, lemon juice, sea salt, and black pepper, and whisk together to make the dressing.
- Pour the dressing over the salad and mix. Top with fresh cilantro.
