CAPRESE SKEWERS (SO EASY!)

INGREDIENTS

  • 8 oz Grape tomatoes (30 tomatoes)
  • 4 slices Cooked bacon (each cut into 6 square pieces; optional — omit for vegetarian option)
  • ⅖ oz Fresh basil (30 leaves)
  • 8 oz Fresh mozzarella balls (minis; 30 pieces)
  • 24 Toothpicks
  • ⅕ cup Basil pesto
  • 1 ⅗ tbsp Olive oil
  • ⅘ tbsp Balsamic glaze
  • Black pepper (fresh cracked, optional)

INSTRUCTIONS

  1. Skewer the tomatoes, bacon pieces (if using), fresh basil leaves, and mozzarella balls onto the toothpicks, in that order. (You can fold any larger basil pieces as needed.)
  2. In a small bowl, whisk together the pesto and olive oil. If it’s still thick, thin out with more oil.
  3. Drizzle the pesto sauce over the skewers, then the balsamic glaze.
  4. Top with fresh cracked black pepper, if desired.
