Ingredients
- 1 cup sushi rice, well rinsed
- 60ml (1/4 cup) sushi seasoning
- Select all ingredients
Method Steps
- Step 1Place the rice in a saucepan. Pour in 250ml (1 cup) water. Cover and set aside for 30 minutes to soak.
- Step 2Meanwhile, cut eight 10cm-square pieces of baking paper and use to line eight 80ml (1/3 cup) muffin holes.
- Step 3Bring the rice to the boil over high heat. Reduce heat to low and simmer for 15 minutes. Set aside, still covered, for 15 minutes to steam. Use a fork to fluff.
- Step 4Transfer rice, in an even layer, to a large shallow bowl or tray. Pour over the sushi seasoning and use a spatula to fold though until rice is room temperature.
- Step 5Place 2 tablespoons of the rice in each of the prepared muffin holes. Press well into the base and up the sides of the holes. Set aside to cool.
- Step 6Transfer cups to a platter and gently remove the paper. Fill with your choice of filings.
