Smoky tofu brekky wrap

Ingredients

  • 1 tsp extra virgin olive oil
  • 100g firm tofu, broken into large pieces
  • 1 ⁄4 tsp smoked paprika
  • 1 ⁄4 tsp ground cumin
  • 1 tsp salt-reduced soy sauce
  • 1 x 42g Simson’s Pantry Lite Low Carb Super Grains wrap
  • 20g baby spinach
  • 1 ⁄4 small avocado, thinly sliced
  • Chipotle sauce, to serve (optional)
  • Select all ingredients

Method Steps

  • Step 1Heat oil in a small non-stick frying pan over medium heat. Add tofu. Cook, stirring, for 1 minute. Add paprika, cumin and soy sauce. Cook, stirring occasionally, for 2 minutes or until tofu is light golden.
  • Step 2Top the wrap with the spinach, avocado and tofu mixture. Drizzle over chipotle sauce, if using. Firmly wrap to enclose filling.
